One of my favorite things to do is to make breakfast. This is funny in itself since I am not a morning person! I ruined my kids long ago by making things from scratch. Especially biscuits. There is nothing quite like a homemade biscuit. Yum! Add a little butter and honey, or jelly...Well use your imagination. I found that it really doesn't take much longer than it does to make canned biscuits. The extra time is well worth the effort. I make a biscuit called Bluegrass Buttermilk Biscuits that I originally found in my hometown church cookbook. My cookbook is tattered and messy. I think of it as well loved. Today I was chilly when I woke up and I immediately thought it would be a good morning for biscuits. I went and got started on them and then woke Steven up for school. He gets out of bed with out a problem when I tell him that I'm making my biscuits. When the kids were younger and had sleepovers I would also make sausage gravy. I believe I may have taught a few 5th grade girls how to make biscuits and gravy. Steven has been my breakfast kid. When he was younger he used to put in his breakfast request at bed time. One night I believe the order included: biscuits, pancakes, sausage and bacon. There was no way a skinny little 4 year old was going to be able to eat all that. These days I don't make breakfast from scratch very often. I do like to make breakfast for company. I guess it's the nurturer in me.
Here's the recipe if you want to give it a try!
2 cups flour
1 tsp Baking Powder
1/2 tsp Salt
1/4 tsp Baking Soda
6 Tbsp Shortening
3/4 cup Buttermilk (or 3/4 cup milk with up to 1 tsp of Vinegar or lemon juice)
Mix first 5 ingredients until they resemble bread crumbs. Add buttermilk. Move dough to floured wax paper and knead until smooth. DO NOT OVERWORK the dough. Bake at 425 for 10-12 minutes. Enjoy!
